Fabien Jouves does not make the kind of Cahors you might expect ! At Mas del Périé, on the limestone plateaux of southwest France, he is rethinking one of France’s oldest wine regions through freshness, forgotten grape varieties, biodynamics, zero-sulphur winemaking, and a very personal fight to bring Cahors back to life.
