GREEK-STYLE POTATO SALAD 🛒 Ingredients (serves 4): 🔸 500g potatoes (1 lb) (I used small ones since they take less time to cook and I don't remove the skin) 🔹 250g cherry tomatoes (9 oz) (you can use 1 large tomato if you like) 🔸 1 red onion 🔹 1 small cucumber 🔸 ½ green bell pepper 🔹 150g feta cheese (5.3 oz) 🔸 1 tablespoon capers (1 tbsp) 🔹 20 Kalamata olives (you can use black Aragón olives or any other) 🔸 45ml olive oil (3 tbsp) 🔹 15 ml lemon juice (1 tbsp) 🔸 1 teaspoon salt (½ tsp) 🔹 Dried oregano 2. ANDALUSIAN SOAK 🛒 Ingredients (serves 4): 🔸 600 g potatoes (21.4 oz) (3 medium potatoes) 🔹 300 g desalted and flaked cod (10.7 oz) 🔸 ½ spring onion 🔹 2-3 table oranges 🔸 14 pitted black olives 🔹 2 hard-boiled eggs 🔸 Salt 🔹 Olive oil 🔸 1 tablespoon vinegar (sherry, apple cider vinegar, etc.) (½ tbsp) 👌 Notes: 🥗Some people prefer to use the cod I prefer to cook it raw. 🥗If you buy cod loin that hasn't been flaked, you can boil it and then flake it and remove the bones and skin. 3. SEAFOOD SALPICÓN 🛒 Ingredients (6-8 servings): 🔸 1 kg mussels in the shell (2 lb) 🔹 200 g cooked peeled prawns (7.1 oz) 🔸 200 g cooked octopus (7.1 oz) 🔹 150 g surimi sticks (8 pieces / 5.3 oz) 🔸 1 medium green Italian pepper 🔹 ½ red pepper 🔸 1 small spring onion (90 g / 3.2 oz) 🔹 100 g pitted mixed olives (3.4 oz) 🔸 Ground pepper 🔹 Chopped fresh parsley To cook the mussels (optional): 🔸 30 ml white wine (2 tbsp) 🔹 A few peppercorns 🔸 1 bay leaf For the vinaigrette: 🔸 ½ teaspoon salt (½ tsp) 🔹 40 ml olive oil (2 ½ tbsp) 🔸 10 ml sherry vinegar (1 tbsp) 🔹 A pinch of sweet paprika (¼ tsp) 👌 Note: You can adjust the ingredients to suit your taste. Some people also add yellow bell pepper, pickled gherkins, pickled green onions instead of fresh, hard-boiled eggs, a clove of garlic in the vinaigrette... 4. Tabbouleh with Bulgur 🛒 Ingredients (serves 4): 🔸 75 g bulgur (1/4 cup + 2 tbsp) (couscous or quinoa, if you don't have any) 🔹 150 g fresh parsley (5.3 oz / 2 cups / 2 bunch) 🔸 2 medium firm tomatoes (300 g / 10.7 oz) 🔹 1/2 spring onion (or onion) 🔸 Green stem of the spring onion 🔹 30 mint or spearmint leaves 🔸 60 ml lemon juice (1/4 cup) 🔹 50 ml olive oil (1/4 cup) 🔸 1 teaspoon salt (½ tsp) 🔹 Pepper 🔸 180 ml water (¾ cup) 👌 Notes: 🥗Bulgur can be found in herbalists, organic stores, and supermarkets. But if you find it difficult, you can use couscous or quinoa, the latter being perfect for those with celiac disease. In these cases, follow the manufacturer's cooking instructions. 🥗It's a perfect salad as a starter or as a snack for dinner. It also goes very well with fish or meat. You can serve it on lettuce leaves as individual bites, even in small glasses. 🥗If you can get hold of fine spring onions, you can use a couple of them along with half an onion. 5. CAULIFLOWER SALAD 🛒 Ingredients (serves 3-4): 🔸 500g cauliflower florets (1 lb) 🔹 2 carrots 🔸 12 olives with or without anchovies 🔹 4 medium sweet and sour gherkins 🔸 100g canned sweetcorn (3.5 oz) 🔹 2 cans of tuna in brine (56g / 2 oz each) 🔸 125g peeled shrimp (4.4 oz) 🔹 Salt 🔸 Chives for garnish (optional) Light mayonnaise: 🔸 4 large hard-boiled eggs 🔹 150g creamy soy yogurt (you can use any of your favorite) (¾ cup + 1 tbsp) 🔸 1 teaspoon Dijon mustard (1 tsp) 🔹 1 teaspoon apple cider vinegar (1 tsp) 🔸 1 tablespoon olive oil (1 tbsp) 🔹 Salt 👌 Note: For the mayonnaise, I started with 100g of yogurt, then added an extra tablespoon because it was too thick. The total was 150g as indicated. 6. WARM POTATO AND GREEN BEAN SALAD 🛒 Ingredients (serves 4): 🔸 500g flat green beans (1 lb) 🔹 600g potatoes (21.4 oz) 🔸 500g cherry tomatoes (1 lb) 🔹 2 onions 🔸 100g goat cheese (3.5 oz) 🔹 2 garlic cloves 🔸 ½ teaspoon of various herbs (½ tsp): rosemary, thyme, basil, and oregano 🔹 Salt 🔸 Pepper 🔹 Olive oil
