米粉シフォンケーキの作り方/抹茶【グルテンフリー・ふわふわ・ノンオイル】

This is the third installment of our rice flour chiffon cake series! ♬ This is a classic and popular chiffon cake flavor: matcha. ♡ Since matcha absorbs moisture, you'll need to adjust the moisture slightly. The batter seems to be quite firm before baking. (*^-^*) The aroma of tea fills the air with every bite. This matcha chiffon cake is my favorite flavor! ♡ Please watch until the end! (*^-^*) If you enjoyed it, please rate and subscribe! ♡ -------------------------------------------------------------------------------------------------------------------------------------------------------------------------------- ------------------------------------------------ Rice Flour Chiffon Cake/Matcha Recipe Ingredients ・Rice flour: 105g ・Eggs (medium): 8 ・Milk: 80cc ・Sugar: 100g ・Matcha: 15g ・Salt: Pinch Directions ① Separate the eggs into yolks and whites. Immerse the bowl of egg whites in a bowl of ice to cool. ② Beat the egg yolks with a whisk until thoroughly combined. ③ Heat the milk in the microwave until just above body temperature (about 40 seconds at 600W). After this, begin preheating the oven (set to 180°C). ④ Add the milk (③) to the bowl of egg yolks (②) and mix thoroughly. ⑤ Add the rice flour and matcha powder to the bowl of egg whites (④) and mix thoroughly until smooth. Since this is rice flour, there is no need to sift. ⑥ Make the meringue. Add a pinch of salt to the bowl of egg whites and beat on low speed with a hand mixer. Once the mixture becomes evenly foamy, add the beet sugar in two additions, beating vigorously with the hand mixer on high speed each time. ⑦ Make a stiff meringue (until the tines stand up straight). ⑧ Add the meringue from (⑦) to the bowl containing the egg yolk batter from (④). First, add one spatula's worth to incorporate the batter. Scrape any batter stuck to the inside of the bowl as you mix. ⑨ Add about two spatulas' worth of egg whites and quickly mix with a whisk to incorporate the air. ⑩ Repeat steps ⑨. ⑪ Finally, switch to a spatula, add the chocolate chips, and mix twice from the bottom. ⑫ Pour the batter into the mold. ⑬ Mix the batter around with chopsticks to remove any excess air, then drop it once from a height of about 10cm and place in the oven to bake. *The temperature setting and baking time will vary depending on your oven and the outside temperature, so please adjust accordingly. ⑭ After 8-10 minutes, remove from the oven, score 4-5 places with a knife, and return to the oven. This will give the cake a beautiful, blooming flower-like finish. ⑮ Immediately after baking, remove from the oven and drop it from a height of about 20 cm.
