Beef:1 kg Onions:5–6 (sliced & fried until golden brown) Oil: 1.5 cups (or as needed) *Ginger-Garlic Paste:* 2 tbsp *Whole Spices:* A small amount of green cardamom, cumin seeds, and black peppercorns *Tomatoes:* 4–5 (chopped) *Dried Plums (Aloo Bukhara):* 10 pieces *Spices:* 1 tbsp Salt (or to taste), 1 tsp Red Chili powder, 1 tsp Green Chili paste *Biryani Masala:* 1 packet *Yogurt:* 1 cup *Water:* 1–2 glasses (for pressure cooking) *Garnish:* Fresh coriander, mint leaves, and green chilies #### For the Rice: *Basmati Rice:* 1 kg (soaked for 30 minutes) *Whole Spices:* Bay leaf, green cardamom, cumin seeds, black peppercorns, cloves, cinnamon stick, star anise *Salt:* 3 tbsp *Oil:* 1 tbsp *Herbs:* Fresh coriander, mint leaves, green chilies #### For Layering & Dum: *Food Color:* Yellow/Orange food color (Zarda rang) *Toppings:* Reserved fried onions, mint, coriander, and green chilies 👩‍🍳 Step-by-Step Instructions 1. *Fry the Meat:* In a pressure cooker, heat oil and fry the beef for 2–3 minutes until it changes color. Add ginger-garlic paste and sauté well. 2. *Build the Gravy:* Add a small amount of whole spices (cardamom, cumin, peppercorns), chopped tomatoes, dried plums, salt, red chili powder, and green chili paste. Cook until the tomatoes soften. 3. *Cook the Beef:* Stir in the biryani masala packet and yogurt. Pour in 1–2 glasses of water. Close the pressure cooker and cook for 20 minutes until the beef is fully tender. 4. *Finish the Korma:* Once the meat is tender, add the crushed or ground fried onions. Mix well, add 1/2 cup of water, and let it simmer until the oil separates. Top with fresh coriander, mint, and green chilies, then cover. 5. *Boil the Rice:* In a large pot of water, add the rice whole spices, 3 tbsp salt, 1 tbsp oil, and a handful of coriander, mint, and green chilies. Boil the soaked rice until it is 70% cooked, then drain. 6. *Layer & Dum:* Grease a steel pot with a little oil to prevent burning. Place a layer of rice, then pour the beef korma over it. Add the remaining rice on top. 7. *Garnish:* Sprinkle yellow food color, reserved fried onions, green chilies, coriander, and mint leaves. 8. *Final Steaming:* Cover tightly and let it steam (dum) on low heat for 20 minutes. ✨ **Your delicious, aromatic Beef Biryani is ready to serve!
