It is a transitional area between the Loire Valley, Brittany, and the Paris Basin. A true haven of greenery, the Sarthe is proud to be the most wooded destination in western France. In the Haut-Maine region, Le Mans, a name synonymous with rillettes, is a city of art and a historic center that played a pivotal role in the rise of the automobile. The city of Le Mans is distinguished by the diversity of its heritage, having preserved the imprints of all eras etched in its stones. A stronghold under Roman rule, capital of the Counts of Maine, today it is a crossroads of Western Europe. A predominantly rural area, it offers a wide variety of products, based on very high-quality pork and poultry. This region is particularly renowned for its Loué chicken, its Le Mans capon, and many other regional specialties such as rillettes and white pudding.
