Sopa de Tomate receita portuguesa da Ilha da Madeira

Once the onion and garlic begin to brown, add the chopped tomatoes, seeded and skinned, and stir. When the tomatoes begin to soften and release their water, add the sprig of herbs. Let it sauté for about 5 minutes. Add the water, salt, and pepper. Stir well and cook for 30 minutes, checking the mixture, adding more water if necessary. After 30 minutes, use a blender to blend just a little, then add the eggs and oregano. Cook for at least 5 more minutes until the eggs are cooked through. Serve hot and garnish with sliced herbs.
