COSORI 10-Cup Rice Cooker Review: MORE THAN RICE

I tested the COSORI Rice Cooker by cooking a complete meal using only its 4 different functions — and honestly, I was not expecting to be this impressed. Mexican rice, frijoles de olla, steamed veggies, and chicken fajitas. One appliance, no stovetop, no separate slow cooker, no separate steamer. Drain and rinse the soaked beans. Add beans to the inner pot with onion, garlic, cilantro, and serrano chile if using. Cover with 6 cups of water or stock. Close the lid. Select SLOW COOK. Set for 4 hours. At the 4-hour mark: open and add salt. Adding salt at the beginning toughens the skins — always add it at the end. Cook for 1 more hour (5 hours total). Remove cilantro and onion before serving. 🍚 ARROZ ROJO MEXICANO (Mexican Red Rice) INGREDIENTS 2 cups long grain white rice (dry) 2 tbsp vegetable oil ¼ white onion, diced 2 garlic cloves, minced 1 cup plain unseasoned tomato sauce 1½ cups chicken broth 1 serrano chile 1 cup frozen veggie mix Salt to taste Fresh cilantro for garnish STEPS Select SAUTÉ. Add oil and heat 1–2 minutes. Add diced onion and minced garlic. Cook 2 minutes until translucent. Add dry rice. Toast stirring constantly for 3–4 minutes until the grains turn golden. Season with salt, pepper, paprika, cayenne, and garlic powder. Mix well and let rest while the pot preheats. Select SAUTÉ. Set for 20 minutes. Add avocado oil and let the pot preheat fully before adding any food. Once preheated, add the seasoned chicken strips in a single layer. Do not crowd them. Cook for 5 minutes, stirring to get color on all sides. They do not need to be fully cooked yet. Remove the chicken and set aside. Add the julienned onion to the pot. Stir for a couple of minutes. Add the peppers one color at a time — green first, then red, then yellow — stirring between each addition. Cook for about 10 minutes until softened with some color on the edges. Return the chicken to the pot. Combine everything and cook for 5 more minutes until the chicken is fully cooked through. Squeeze lime over everything directly in the pot. Taste and adjust salt.
