Whole Wheat Bread Ingredients: 610g Whole Wheat Flour 210g Whole Wheat Rye Flour 320g Water 18g Salt 0.5g Fresh Yeast 320g Natural Yogurt (3.5% Fat) 22g Vinegar Bake at 230°C for 50 minutes Rye Mixed Bread Ingredients: 480g Water 1g Fresh Yeast 700g Wheat Flour Type 550 300g Whole Wheat Rye Flour 200g Natural Yogurt (3.5% Fat) 20g Salt 25g Vinegar Bake at 230°C for 50 minutes Toast Bread Ingredients: 855g Wheat Flour Type 550 545g Water 18g Salt 0.8g Fresh Yeast 52g Butter 25g Sugar After 24 hours of resting, shape the dough and let it rest in the covered loaf pan for another hour. Place a loaf pan with a lid in a cold oven, set the temperature to 50°C, and let the dough stand for 30 minutes. (If you don't have a loaf pan with a lid, you can cover it with aluminum foil.) Then set the oven to 200°C and bake the bread for 45 minutes. Remove the bread from the pan and bake for another 20 minutes.
