Gently heat the milk, sugar, lemon peel, and cinnamon stick in a saucepan. Once it begins to boil, remove from the heat and strain to remove the lemon peel and cinnamon stick, and to avoid any cream residue in the milk. Add a splash of sweet wine and a pinch of ground cinnamon, and stir. Let it cool slightly. Beat the 3 eggs in a bowl or deep plate. Set aside. Now, soak each slice of bread, one by one, in the infused milk and then in the beaten egg. In an air fryer, spray a piece of paper towel with oil and place the French toast slices on top. Spray with oil and set the air fryer to 190ºC (375ºF) for about 18-20 minutes. Turn them over once they've browned, being careful not to overcook them; they should be just golden brown. If you prefer to fry them: fry them in hot oil, turning them over so they brown on both sides. Remove them from the oil and place them on paper towels to absorb any excess oil. Repeat until all the slices are fried. Now let's prepare the honey glaze. Simply put the honey and water in a small saucepan and let it heat until the honey and water dissolve and mix well. Let it cool slightly. Finally, we dip each French toast slice in the honey, place them on a serving dish, and they're ready to serve...
