In this video Steve from @SmokeTrailsBBQ conducts several experiments to find the best internal temperature and the best methods for soft bite-though skin and crispy skin. #oklahomajoes #okj #chickenthighs #bbq Best BBQ Chicken Thighs Recipe: Season chicken thighs with your favorite BBQ rub Pour liquid chicken fat or butter into aluminum pan (approx. ¼ inch full on bottom of pan) Place chicken thighs skin-side down in pan, as flat as possible so that they will later come into better contact with the grates when you sear them Smoke at 185 degrees (low smoke) for 2-3 hours until the internal temperature of the thighs reach 165 degrees Remove pan from smoker and rest thighs down in temperature at least 30 minutes. Increase smoker or grill temperature to 500 degrees f and sear chicken thighs (skin side down only) for approx. 1 min until the skin is crispy golden brown with grill marks. Press thighs down for better contact with grill Brush with your favorite sauce and put back in smoker (skin side up) at 185-225 degrees for 30 mins to tack up sauce and get more smoke flavor
