Recipe Ingredients For the dough 500 g type 00 white flour 90 g sugar Grated zest of one unwaxed lemon 100 ml olive oil or corn oil 40 g (2 medium) egg yolks 170 ml milk 8 g baking powder to taste salt For decoration 120 g (2 raw) eggs 20 g granulated sugar For brushing 60 g (1 medium) eggs Scarcedda preparation 1. Sift the white flour into a bowl. Combine the baking powder, sugar, and salt. 2. Flavor the flour mixture with the grated zest of an organic lemon. The perfect idea To personalize the cake, you can replace the lemon zest with limoncello (preferably homemade). 3. Crack the eggs and separate the yolks from the whites. Add the yolks to the flour mixture, along with the milk and seed oil. Did you know that... Many Scarcedda recipes recommend using olive oil. Here, seed oil is recommended because it is more delicate. You can choose whether to use a more flavorful oil (e.g., olive oil) or a seed oil. 4. Mix everything well with your hands until the dough is firm but not sticky (the consistency is similar to shortcrust pastry). Wrap the dough in plastic wrap and let it rest for 30 minutes. 5. After half an hour, take the dough and divide it into three equal pieces (weighing approximately 250-260 g) and one smaller piece (about 50 g). 6. Now work the three larger pieces. Using your hands, form three ropes about 55 cm long. Braid the ropes, then join the two ends to form a donut. 7. Place the two raw eggs (with their shells) on two points of the donut. 8. With the remaining dough, form two small braids and arrange them in a cross (or individually) on top of the two raw eggs. 9. Brush the entire surface with the lightly beaten egg and finish with granulated sugar. 10. Bake the Scarcedda in a preheated oven at 210°C (410°F) for about 30 minutes (reducing the oven temperature during baking if necessary). 11.
