Ingredients For the Koftas 500g arbi (colocasia/taro root), boiled and peeled 2 tbsp gram flour (besan) 1 green chili, finely chopped ½ tsp red chili powder ½ tsp coriander powder Salt to taste 2 tbsp fresh coriander, chopped Oil for frying For the Gravy 2 medium onions, finely chopped 2 tomatoes, pureed 1 tbsp ginger-garlic paste ½ tsp turmeric powder 1 tsp red chili powder 1 tsp coriander powder ½ tsp garam masala Salt to taste 2 cups water 1 tbsp fresh coriander for garnish Method Step 1: Prepare the Koftas Mash the boiled arbi until smooth. Add gram flour, green chili, red chili powder, coriander powder, salt, and fresh coriander. Mix well and shape into small balls. Heat oil and fry the koftas until golden brown. Remove and set aside. Step 2: Make the Gravy Heat 2 tbsp oil in a pan. Sauté the onions until golden brown. Add ginger-garlic paste and cook for 1 minute. Add tomato puree, turmeric, red chili powder, coriander powder, and salt. Cook until the oil starts separating from the masala. Step 3: Finish the Curry Pour in water and bring the gravy to a simmer. Add garam masala and mix well. Gently add the fried koftas. Cook for 2–3 minutes on low heat.
