The impact of increasing the protein content of milk is greater than that of increasing the fat content. According to current payment guidelines, one point of protein has a price impact three times greater than that of increasing one point of fat. Thus, protein has become the main determinant of the value of milk paid to producers, although the other components of the product should not be neglected.
