Now when you eat out at a restaurant you think you are eating 100% shrimp – YOU ARE NOT! You are eating shrimp and pork fat with the inclusion of baking powder to aid in puffing the shrimp cakes up. The pork fat is used as a filler because shrimp is relatively expensive. The restaurant shrimp cakes have been blended. Making at home you can make 100% Shrimp cakes without the inclusion of any pork filler. I will show you how to make my family recipe for Thai Shrimp Cakes. Now I learnt this from my wife who does not eat pork and this is the way we make 100% Thai Shrimp Cakes – full of flavour using a couple of Thai ingredients and frying in panko bread crumbs.
