THE RECIPES NANIMO BARS Bottom layer ½ cup butter 2 ½ tbsp cocoa powder 1 egg ½ cup sugar 1 cup sweetened shredded coconut 2 cups graham cracker crumbs Milk to moisten (if needed to bring together) melt butter, cocoa powder, egg and sugar in a saucepan on low heat add other ingredients and mix thouroughly spread into a 8x8 pan and cool completely in fridge Middle layer ½ cup butter 2 cups icing sugar 2 tbsp instant vanilla pudding 3 tbsp milk cream butter and icing sugar soak pudding powder in milk and add to butter and icing mixture spread evenly over chilled bottom layer and chill thoroughly Topping 3 squares bittersweet chocolate 1 tbsp butter melt together and pour over middle layer chill and allow to set to hard before serving KIRBY'S SPINACH BALLS A unique and tasty appetizer that can be made ahead and baked as needed. EQUIPMENT: Timer, parchment paper, medium bowl, small bowl, Kitchen towel, rolling pin or mini chopper, cheese grater, garlic press, sharp knife, whisk, heatproof spoon, cookie tray, container to bring them home in YIELD 24 - 30 balls INGREDIENTS 1 pkg (300 g) frozen chopped spinach, defrosted and squeezed in a kitchen towel until very dry 1 bag (125 g) seasoned salad croutons, crushed into small pieces 1 cup (250 mL) Tre Stelle® Grana Padano Cheese, grated 1 clove garlic, minced 4 green onions, finely chopped 1 jalapeno pepper, seeded and finely chopped 1/2 cup (125 mL) butter, melted 2 eggs, beaten 1 jar (250 mL) hot red pepper jelly INSTRUCTIONS Preheat oven to 350°F (180°C). Place spinach in a medium bowl; add croutons, Grana Padano Cheese, garlic, green onions, jalapeno pepper, butter and eggs, stir with a wooden spoon to combine. Using damp hands, form into 1" balls and place on a cookie sheet. Bake for 15 minutes. Remove from oven and serve with hot pepper jelly. KIM'S CHRISTMAS STUFFING Here are the ingredients, but you will have to put it together in whatever way suits your taste! THE BASE Equal amounts Sweet potatoes and White potatoes- boiled and mashed Seasoned Bread crumbs Soft Croutons from the bakery section of your supermarket (not the hard dried ones) Mild Italian Sausage removed from the casings, crumbled and fully cooked (I usually use two in my batch of stuffing) The base should be moist but not too wet or mushy. As a guideline, the fresh croutons should still have texture. THE SEASONINGS Finely chopped Yellow Onion Finely chopped Green Pepper Finely chopped Celery Finely chopped Parsley (optional) SPICES TO TASTE: Summer Savoury Sage Marjoram Salt and Pepper Mix well. Use as dressing and cook separately in an oven proof casserole dish. Use as stuffing in the turkey - be sure to use a meat thermometer when cooking to ensure the bird is up to temperature.
