POV: Making Loaded Jerk Chicken Wraps After Breakfast Service 🌯🔥👌😊👍

Just after finishing breakfast service, I moved straight on to making these Jerk × Gochujang Chicken Wraps for lunch. I marinated the chicken with jerk paste, coconut milk, soy sauce and gochujang, giving the classic Caribbean flavours a small Korean twist. While the chicken roasted, I prepared a fresh island-style slaw with pineapple, steamed some new potatoes and turned the roasting juices into a proper jerk chicken gravy. The toasted tortilla was loaded with spicy jerk-gochujang mayo, pineapple slaw and roasted chicken, then served with sautéed new potatoes and a little gravy. I only realised afterwards that I had made a katsu chicken wrap variation earlier in the week. Perhaps this is becoming a new series: Variations on Wraps. Another version may be coming next Monday!
