Valor y usos del orujo

Olive pomace has ceased to be an environmental problem and has become a veritable wealth-generating industry, utilizing 100% of each olive. We visited two pomace processing plants located in Puente Genil and La Luisiana, in the provinces of Córdoba and Seville respectively. With a turnover exceeding 350 million euros per year, the olive pomace oil sector generates more than 18,000 jobs, and its qualities make it the best oil in the world for frying. It lasts five times longer and has as many health benefits as its older sibling, extra virgin olive oil. For every 100 kilos of olives that enter an olive mill, only 20 are transformed into olive oil, while the other 80 kilos are wet, fatty pomace, or alperujo, composed of skin, pit, pulp, and water. In a typical year, Spain produces around 1.5 million tons of olive oil, but generates approximately 7 million tons of wet olive pomace. The pomace sector currently has 52 pomace processing plants and 9 refineries responsible for adding value to these millions of tons of olive pomace. From this pomace, pure olive pomace oil, phenols for sanitary use, fertilizers for agriculture, and, primarily, biomass are extracted from the olive pits—a byproduct with enormous calorific value for electricity production.
