Bacon Wrapped Potatoes

These bacon wrapped potato wedges are fancy enough for a side dish for a fancy dinner or as a great appetizer. I would serve them with some ranch dressing or sour cream/chives mixture to dip in. Perfect for game day! This recipe makes about 32 of them. 1.5 lbs of potatoes sliced into wedges. 2 tbsp olive oil 1/2 cup seasoned bread crumbs. 1/2 cup parmesan cheese Salt, pepper, paprika or whatever or kind of seasoning you want to add (like Cayenne pepper, garlic powder, onion powder etc). barbecue sauce Slice potatoes into wedges. Put them into a bowl and cover with boiling water. In my opinion, this is probably an unnecessary step, if you don't do this they will simply take a bit longer in the oven in my opinion, All them to sit in boiling water for 30 minutes. Drain out water and toss potatoes with olive oil until coated. Mix crumbs, cheese and spices together. Dip olive oil coated potato wedges in the crumbs, wrap with a slice of bacon and put them on a cookie sheet that has been greased or covered with foil to make clean up easier. Brush on some barbeque sauce. Bake at 350F for about 45 minutes or until potatoes are tender and bacon is crisp.
