Today's video focuses on the most important ingredient in cocktails: ice. There's no easier way to make your mixed drink more beautiful than using clean, clear ice. In this video, I'll tell you and show you several simple ways to make ice at home, as well as how I create clean, clear ice of the desired shape and size. The most important things you'll need are desire and patience. I deliberately avoid using any devices for freezing cubes and balls in special containers for clean ice, but I wanted to show you the most cost-effective way to freeze ice. In this case, you'll need a food-grade container rated for use down to -40 degrees Celsius, foamed polyethylene (styrofoam) or some other insulating material for the sides and bottom of the container, and construction tape for secure installation. Filtered and boiled water was used to freeze the ice. The methods and materials may be considered primitive by many, but that doesn't make them any less effective or readily available for making ice. The total time required to make the amount of ice shown in the video was approximately 28 hours. Without explanation and description of all the steps, breaking the ice takes 15 to 20 minutes. To store clean ice, use an airtight container and a separate compartment; this will allow the ice to absorb odors from outside the freezer. If you notice an off-flavor during use, rinse it under cold running water (use cold water, otherwise the ice may crack) and the odor will disappear.
