The term "Neapolitan pizza" is regulated by the Association of True Neapolitan Pizza (https://www.pizzanapoletana.org) and is used for two types of pizza: margherita (cheese and basil) and marinara (garlic and oregano). To make a true Neapolitan pizza, you must meet all the requirements set by the Association. Among them, the Association states that Neapolitan pizza must be baked in a wood-fired oven for 60 to 90 seconds, at a temperature between 430°C and 480°C.
