How to Freeze Fresh OKRA When okra is in abundance, what do you do with all of the okra pods? Freeze them. This method allows you to freeze okra easily where the pods are easily accessible to add to a soup, tomatoes, or peas. Wash okra pods several times to remove any dirt or debris. Dry pods thoroughly and cut into ½ pieces discarding tops and ends off each pod. Place pods on a cookie sheet lined with parchment paper in a thin single layer. Place in the freezer for four hours to quickly freeze. After four hours, remove from the freezer, and place in ziplock freezer bags. Label and return to the freezer.
