Vrindavan's Famous Aloo Tikki and Matar Chaat

Hello friends and welcome to The Mathur Zaika. I am Pankaj Mathur and I'm very excited to share this delectable recipe from the streets of Vrindavan. Vrindavan's famous aloo tikki is every local's favourite snack and every visitor's full meal! This recipe has been a part of Vrindavan and Mathura's traditional palate. Hope you like this recipe! * PLEASE NOTE* Add Dhaniya powder to the chaat, not jeera powder. Ingredients: Potatoes - Boiled, 1kg hard boiled and mashed Green chilli - 1 spoon, diced Carrot - 50gm, grated Radish - 50gm, grated Coriander - 4 spoon, finely chopped Ginger - 1 inch, julienne Corn flour - 100 gms Desi Ghee - 100gm for frying Coriander powder - 4 spoon, dry roasted Black pepper - 1tbsp, powder Black salt, 1tbsp Yellow chili powder, 1 1/2 tbsp, Tamarind paste, 2tbsp Salt to taste Matara, 500 grams: Soaked and boiled Meetha soda, 1/2 tbsp Meethi chutney: Boil amchur (mango) powder, jaggery, red chilli powder, jeera powder and garam masala. Greent/mint chutney: Grind fresh coriander, mint leaves, amchur powder, salt and green chilis. Procedure: 1. Boil potatoes according to need. Make sure the potatos are hard boiled. 2. Once boiled, separate them from water and let them cool. 3. Mash your potatoes by using a fork AND don't grate them. (The process of crispy Aloo Tikki is to hard boil your potatoes and mash them using a fork) 4. Now, add cornflour and knead your dough. It should be a relatively tighter dough. 5. Add a tablespoon of ghee add this stage and keep it aside. 6. Now, boil your Matara and add the meetha soda with along with some salt.
