Strangolapreti / Ñoquis de Espinaca y Pan

Strangolapreti are traditional bread gnocchi from the Trento area, made with stale bread, spinach (or other green vegetables), milk, eggs, and flour. The most traditional way to enjoy these hearty dumplings is with a simple browned butter and sage sauce, topped with some grated cheese. Ingredients: 500g of spinach 200g of stale bread, cut into cubes 1/2 onion (about 50 gr) 180ml of whole milk 2 eggs 80g of plain flour, plus extra for dusting 50g of Grana Padano or Parmesan grated 1 pinch of nutmeg, freshly grated salt pepper 50g of butter semolina flour, for dusting TO SERVE 1 handful of sage leaves Grated Grana Padano or Parmesan
