Healthy Meal Prep with me! A week of meal prep in just over 2 hours. This took some planning and shopping but I share it all with you and features a slow cooker meal, veggie chilli, madras curry, breakfast granola, snacks and lunches too. Madras Curry:    • Epic 6 Ingredient Chicken Meal Prep - Easy...   Veggie Chilli: Butternut Squash Soup: Heat the butter in a pan, add the butternut squash, onion, garlic and stock cube, and stir well. Cook gently for four or five minutes. Add the ginger and chilli flakes and cook for five more minutes. Pour in the water and bring to a rapid boil, then turn down the heat slightly and simmer for about fifteen minutes, or until the squash is soft. Once the squash is soft, blend until the mixture has a fine, creamy consistency. Return to the heat and add the coconut milk. Let simmer for five minutes. Season to taste (serve this with fresh coriander and a squeeze of lime juice).
