Ingredients Dough: 125 g softened butter 150 g sugar 500 g Greek yogurt (you can use any fermented milk product: sour cream, cottage cheese, kefir, etc.) 2 eggs zest of 2 oranges juice of 2 oranges 400 g all-purpose flour 1 tsp (about 10 g) baking powder about 3 tbsp finely chopped pistachios Filling: about 750–760 g apricots Syrup: 200 g orange juice 125 g honey optional: fresh mint sprigs Directions 1. The butter should be soft. If it's slightly melted, don't worry. Combine the butter and sugar and beat until light and fluffy. 2. In a separate bowl, combine the yogurt and eggs, whisking until smooth. Add the zest of two oranges and the juice of two oranges, and whisk again. 3. Sift the flour, add the baking powder, and mix well to evenly distribute the baking powder. Then fold in the finely chopped pistachios. 4. Add the liquid mixture of yogurt, eggs, orange juice, and zest to the creamed butter and sugar. Then fold in the dry mixture of flour, baking powder, and pistachios. Mix with a spatula until smooth. The dough should be light and elastic, not tight or runny. 5. Cut the apricots in half, remove the pits, and then cut each half in half again. Cut them large enough so that they retain their shape during baking. Fold some of the apricots into the dough, reserving the rest for the top. 6. Line a 26 cm diameter tin with parchment paper and grease the sides generously with butter. You can lightly sprinkle them with sugar, if desired. 7. Pour the batter into the tin to fill it about ¾ of the way. Arrange the remaining apricots on top. Lightly sprinkle the surface with sugar, if desired, to create a beautiful caramelized crust during baking. 8. Bake in a preheated oven at 180°C for about 50 minutes. Syrup 1. Combine the orange juice and honey, bring to a boil, and simmer for about 1 minute. Remove from heat. If possible, add some mint sprigs and let the syrup steep. Then cool to room temperature. Cool the finished pie slightly and, while still warm, generously drizzle it with the honey-orange syrup. Optional: You can use peaches, plums, or apples instead of apricots; In winter, fresh apricots can be substituted with canned ones; If using berries, roll them in starch first; Vanillin can be added if desired; You can use sugar instead of honey in the syrup.
