Orange County Ribs Smoked On The Oklahoma Joe's Highland

I've lived in Orange County most of my adult life, so I decided to prepare some ribs to honor that connection. Using some fresh orange zest and brown sugar, I created a sweet rub for a pair of St. Louis cut spareribs to be smoked on the Oklahoma Joe's Highland offset using a mix of pecan and peach wood. What resulted were some of the most tender ribs I've ever made that still retained a good bite.
