Sus orígenes se remontan a la época medieval, durante una semana los campesinos se reunían para vender y comprar hermosos animales en Jerez, principalmente hermosos caballos, bebiendo habitualmente para celebrar los tratos. El origen de la feria de Jerez, se da en los años de la conquista castellana. Alfonso X llevó a cabo la política de conceder una feria de ganado a las ciudades que ocupaba, para ayudar a activar la economía local. En el caso de Jerez, la feria de ganado se instaura en la segunda mitad del siglo XIII, concretamente algunos historiadores apuntan a 1264, poco después de la definitiva conquista castellana de la ciudad. En el siglo XIX se producen las primeras variaciones en torno al concepto de feria. De feria ganadera evoluciona a modelo expositivo, concretamente en 1856. En 1867 se crea una Comisión Especial de Ferias.
