TAWA ACHARI MUTTON (𝙎𝙚𝙚 𝙙𝙚𝙩𝙖𝙞𝙡𝙚𝙙 𝙩𝙚𝙭𝙩 𝙧𝙚𝙘𝙞𝙥𝙚 𝙗𝙚𝙡𝙤𝙬) Tawa ki tez aanch, achari masalon ka khatta-teekha jadoo. Tawa Achari Mutton, bold flavours aur desi andaaz ka perfect mel. Bay leaf, तेज पत्ता 3 no. Black Cardamom, बड़ी इलायची 1 kg Mutton with bones, मटन ½ tsp Nigella seeds, कलौंजी ½ tsp Fennel seeds, सौंफ ½ tsp Cumin seeds, जीरा ¼ tsp Fenugreek seeds, मेथी दाना ½ tsp Small Mustard seeds, छोटी राई 3-4 large Onions (roughly sliced), प्याज Salt to taste, नमक स्वादअनुसार Prepared Curd Mixture, तैयार किया हुआ दही का मिश्रण ¾ cup Water, पानी For Achari Masala 1 heaped tbsp Degi Red Chilli powder, देगी लाल मिर्च पाउडर 1 tsp Turmeric powder, हल्दी पाउडर 5-6 no. Black Cardamom, बड़ी इलायची 7-8 no. Green Cardamom, हरी इलायची 1 heaped tbsp Black Peppercorns, काली मिर्च के दाने 2 tbsp Coriander seeds, धनिये के बीज 1 tbsp Coriander powder, धनिया पाउडर ½ tsp Cumin seeds, जीरा ½ tsp Fennel seeds, सौंफ ¼ tsp Fenugreek seeds, मेथी दाना ½ tsp Small Mustard seeds, छोटी राई 1 tsp Dry Mango powder, आमचूर पाउडर ½ tsp Nigella seeds, कलौंजी For Curd Mixture 2 cups Curd (beaten), दही 2 ½ heaped tbsp Prepared Achari Masala, तैयार किया हुआ अचारी मसाला 2 ½ tbsp Ginger Garlic Paste, अदरक लहसुन का पेस्ट For Tawa Achari Mutton 2-3 tbsp Ghee, घी 1 medium Onion (finely chopped), प्याज 2 no. Green Chillies (less spicy & finely chopped), हरी मिर्च 1 tbsp Tender Coriander stems (finely chopped), धनिया के डंठल 3-4 large Tomatoes (puree), टमाटर प्यूरी 1 inch Ginger (peeled & julienned), अदरक 1 heaped tbsp Prepared Achari Masala, तैयार किया हुआ अचारी मसाला 1 large Onion (roughly diced), प्याज ¼ cup Water, पानी Cooked Mutton, पका हुआ मटन 10-12 no. Bhavnagri Chillies (cut into halves), भावनगरी मिर्च 2 large Tomatoes (cut into quarters), टमाटर 1-2 tsp Prepared Achari Masala, तैयार किया हुआ अचारी मसाला 2-3 tbsp fresh Coriander leaves (finely chopped), धनिया पत्ता For Garnish Coriander sprig, धनिया पत्ता Process For Cooking Mutton • In a pressure cooker, add mustard oil, once it's smoky hot, add bay leaf, black cardamom, mutton and saute for a minute. • Add nigella seeds, fennel seeds, cumin seeds, small mustard seeds and give it a good mix. • Add onions, salt to taste and let it cook for 7-8 minutes or until onion gets light brown in colour. • Add prepared curd mixture and cook for another 4-5 minutes until oil separates from the masala. • Add water to adjust the consistency, give it a good mix, cover it with the lid and allow to cook for 7-8 whistles or until it's tender. • Once mutton gets cooked then keep it aside to depressurize the cooker. For Achari Masala • In a tray, add degi red chilli powder, turmeric powder, black cardamom, green cardamom, black peppercorns, coriander seeds, coriander powder. • Add cumin seeds, fennel seeds, fenugreek seeds, small mustard seeds, dry mango powder, nigella seeds and give it a good mix. • Transfer it into the mixer grinder jar and grind it into the smooth fine powder. • Keep it aside for further use. For Curd Mixture • In a bowl, add curd, prepared achari masala, ginger garlic paste and give it a good mix. • Keep it aside for further use.
