Perfect for: family meals Ramadan cooking weekend cooking authentic biryani lovers Full ingredients List: Fired onions: 400g sliced red onion 1 cup oil Ginger & Garlic paste: 6-8tbsp clove garlic 1 - 1.5 cubed ginger 4-6 fresh green chilli 1/4 cup water Marinade: 1 cup yogurt Ginger garlic paste 2 tsp salt 1 tsp turmeric powder 2 tsp Kashmiri chilli powder 2 tsp coriander powder 2 tsp fennel powder 1 tsp cumin powder 1 tsp garam massala powder 8 dried plum (aloo bukhara) 1 kg chicken⁠ 1 tsp cumin seeds 6 Cardimon 2 cinnamon 2 bayleaf 6 clove ⁠300g onion Rice 1 tsp salt ⁠4 Cardimon ⁠2 cinnamon ⁠2 bayleaf ⁠6 clove ⁠1 tbsp oil ⁠3 cup rice ⁠fresh coriander Method Caramelised onions: 1 cup oil add 400g sliced onion. Caramelise onion until golden brown then remove from oil. Ginger garlic paste Blend: 6-8tbsp clove garlic 1 - 1.5 cubed ginger 4-6 fresh green chilli 1/4 cup water Marinate chicken: 1 cup yogurt Ginger garlic paste 2 tsp salt 1 tsp turmeric powder 2 tsp Kashmiri chilli powder 2 tsp coriander powder 2 tsp fennel powder 1 tsp cumin powder 1 tsp garam massala powder 8 dried plum (aloo bukhara) *add the ginger & Garlic paste you made. Now marinate the chicken. Chicken curry. Into 1 cup of oil add: 1 tsp cumin seeds 6 Cardimon 2 cinnamon 2 bayleaf 6 clove Add 300g onion and caramelise | once golden add Marinated chicken and cook until the chicken is thick in consistency and the chicken cooked will take around 25-30mins Rice: Boil water add 1 tsp salt | 4 Cardimon | 2 cinnamon | 2 bayleaf | 6 clove | 1 tbsp oil Add rice and cook until 60-70% cooked then sieve out the rice Layer biryani 1st layer | gravy 2nd layer | rice 3rd layer | chicken | remaining gravy | 0.5 of the fried onion | coriander 4 layer | rice | remaining onions | coriander Dum cook for 30mins then rest 10-20 mins before opening the foil.
