Cooking For One || Canned Chicken THREE WAYS Come along with me today as I cook for one, just me! I keep my meals pretty simple, especially when cooking for one. You're important enough to cook delicious food for yourself, just like you do for others! CREAMY WHITE CHICKEN CHILI INGREDIENTS: (1) 12.5 oz. can of chicken (drained), 1 1/2 c chicken broth, 1 can white beans, 2 oz. chopped green chili peppers, 3/4 tsp ground cumin, 1/2 c shredded pepper jack cheese, 1/4 to 1/2 c sour cream, salt & pepper to taste, Cilantro (optional) INSTRUCTIONS: In a saucepan, combine the chicken, chicken broth, beans, chili peppers, and cumin. Bring to a boil on medium - high heat, stirring frequently. Once it starts boiling, turn the heat down to low and simmer for about 15 minutes. Add the cheese, a small amount at a time, stirring as you add it. Remove from the heat and stir in the sour cream. ENJOY!! MILLION DOLLAR CHICKEN CASSEROLE INGREDIENTS: (1) 12.5 oz. can of chicken (drained), 1/2 c sour cream, 1/2 c mayonnaise, 1/2 can cream of chicken soup, 1/2 c shredded cheddar cheese, 1/2 c shredded mozzarella cheese, 1/2 c grated parmesan cheese, 1/2 sleeve Ritz crackers, 1/4 c butter (melted), 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp dried oregano, salt & pepper to taste, parsley (for garnish) INSTRUCTIONS: Preheat oven to 350 degrees F. Grease an 8x8 baking dish. In a mixing bowl, combine drained canned chicken, sour cream, mayonnaise, cream of chicken soup, cheddar cheese, mozzarella cheese, Parmesan cheese, garlic powder, onion powder, oregano, salt & pepper. Mix until well combined. Transfer chicken mixture to the baking dish, spreading it evenly. Crush Ritz crackers on top. Melt butter in microwave and drizzle over the top of the crushed Ritz crackers. Bake for 40 minutes or until the casserole is bubbly and the top is golden brown. Remove from oven and let rest for a few minutes. Garnish with parsley before serving. FRENCH ONION CHICKEN & RICE BAKE INGREDIENTS: 1 c Instant White Rice, 1 c water, (1) 12.5 oz. can of chicken, 1/2 c refrigerated French Onion Dip, 1/2 can Cream Of Chicken Soup, 1/4 c chicken broth, 1/2 c shredded cheddar cheese, 1/4 to 1/2 c French Fried Onions INSTRUCTIONS: Preheat oven to 350 degrees F. Grease an 8x8 baking dish and set aside. In a saucepan bring water to a boil. Add instant rice, cover and turn off heat. Allow to stand for 5 minutes, until all the water is absorbed. In a bowl, combine drained canned chicken, cream of chicken soup, French onion dip, cheddar cheese, chicken broth, and cooked rice. Spread evenly into prepared pan and top with French fried onions. Bake for 20 - 25 minutes, until cheese is melted & bubbly.
