We revisited the Central de Abastos in Mexico City, one of the most impressive and vibrant markets in the city. 🌆 This time, we met the famous "paperos," also known as the "chacales" of the market, who shared a bit about their intense workday. They start their work at 2:00 a.m., moving hundreds of boxes and crates filled with fruits, vegetables, and various fresh produce. Their work is essential: they unload trucks and trailers, transport the merchandise to the refrigerated warehouses, and then to the stalls where it reaches thousands of customers every day.
