RED MULLET.How to prepare and cook mullet.

I take one beautiful fresh red mullet,(the woodcock of the sea),fillet it,then cook it, with a clean and punchy, warm chorizo and tomato salad.Takes 10 minutes,simplicity itself, but full of flavour.This dish would work well with grey mullet,sea bass,or any other white fleshed fish,a truly seasonal fresh summer dish,enjoy it,i did ,surf `N` turf at its best,great combination,many thanks.
