Chili Garlic Noodles is a delicious and popular Indo-Chinese dish, prepared with the strong aroma of garlic, the fiery tang of red chilies, and a variety of colorful vegetables. This recipe is ready in minutes and is loved by everyone, from children to adults. It's a great option for evening snacks, weekend dinners, or any sudden noodle craving. Ingredients (Serves 2–3) To boil the noodles: Noodles – 200 grams Water – 5–6 cups Salt – 1 teaspoon Oil – 1 teaspoon For the chili garlic sauce: Garlic (finely chopped) – 10–12 cloves Dried red chili paste – 1 tablespoon Red chili flakes – 1 teaspoon Tomato ketchup – 1 tablespoon Soy sauce – 1 tablespoon Red chili sauce – 1 tablespoon Vinegar – 1 teaspoon Sugar – 1/2 teaspoon Salt – to taste Method of preparation 1. Boil the noodles: Bring water to a boil in a large pot. Add salt and oil. Add the noodles and cook according to the package instructions for 4–5 minutes. Drain the noodles and rinse them under cold water to prevent them from sticking together. Apply a little oil on top and set aside. 2. Prepare the chili garlic mixture: In a small bowl, combine the red chili paste, red chili sauce, tomato ketchup, soy sauce, vinegar, and sugar. 3. Prepare the noodles: Heat oil in a wok or pan. Add finely chopped garlic and fry until lightly golden. Add the onion and stir-fry over high heat for 1 minute. Add the carrots, bell peppers, and cabbage and stir-fry for 2-3 minutes. The vegetables should be slightly crisp. Add the prepared chili-garlic mixture and mix well. Now add the boiled noodles. Add salt and red chili flakes to taste. Toss everything well over high heat for 2-3 minutes. Add the green onions and turn off the heat. Serving method: Serve the hot chili garlic noodles garnished with spring onions and a few chili flakes. You can serve it with Manchurian, Chili Paneer, or any other Indo-Chinese dish of your choice. Tips: Do not overcook the noodles, or they may break. Always cook the noodles on high heat to get a restaurant-like taste. The spiciness can be adjusted to your liking.
