On this occasion, I visited the beautiful magical town of Zempoala, located in the state of Hidalgo. Let me tell you that Zempoala is a "town with flavor," with typical dishes like donkey bread, which I was able to try at the artisanal bakery "La Guadalupana," located in the center of this magical town. Or the famous Ximbote, which consists of pork, nopales, sausage, leather, morita chile, onion, epazote, garlic, lard, and salt cooked inside the tenderest maguey stalk for two hours over charcoal. To enjoy this dish, I recommend the restaurant "El Rincón de Frida," where you can find it whole, half, or in a taco. Admission to the Casa Ejidal is free, and there I was able to see the photo exhibition "Gone with the Wind: Memories of Zempoala" to learn about this place's past. A must-see stop on your visit is the Ex-Covent of All Saints. The religious complex consists of a temple, cloister, atrium, and an open chapel where the indigenous population was evangelized. Zempoala is home to a large number of haciendas, most of which were dedicated to the production of pulque. On this visit, I was able to visit the Hacienda Casa Grande, located in the center and approximately 200 years old, as well as the Hacienda San Juan Pueblilla, where you can visit the Hacienda Brewery, learn about the brewing process, and savor its flavor. If you want to learn more about Zempoala's past, don't miss the Zacuala community museum, where you'll find original pre-Hispanic artifacts found by residents of this area. The Father Tembleque Aqueduct is a must-see, as it is a magnificent structure that spans the state of Hidalgo and Mexico. Its name is in honor of Father Francisco de Tembleque, who oversaw the construction of this structure, which was declared a World Heritage Site in 2015. Finally, I visited the Tepa train station, which, although I found it closed, is worth seeing, even from the outside, as its architecture is beautiful and Instagrammable.
