Luddifoodi - Minestrone
A simple and easy way of cooking a wonderful flavour packed Minestrone soup. Minestrone is traditionaly a vegetable soup, but the option of cooking with bacon or probably guanciale is in my opinion the better option and adds a lot of flavour. Ingredients are: Bacon, carrots, cellery, aubergine, onions, garlic, spring-onions, lentles, tomato-puré, basil, oregani and black pepper. I used a mushroom stock. The preces is simple. Cut the vegetable in to bite size pieces, sauté them in the pot, add the puré and the spice/herbs. Add the stock and let it cook until the lentles are soft and delicious. Personaly I like to serve it the next day with some nice bread and a lot of cheese on top.
