Main ingredients: Fresh tomatoes Risotto rice Burrata Olive oil Salt and pepper First step: Cut the tomatoes Put the tomatoes in boiling water for a few seconds to peel them easily. Cut the tomatoes into quarters, remove all the insides, and set the seeds aside. Season and bake for about 30 minutes. Second step: Prepare the cooking water Blend one tomato and set aside the remaining seeds. Strain through a colander. Step 3: Cook the risotto In a skillet, toast the rice over high heat. Add white wine, then the tomato water. Cook for 16 to 18 minutes. Step 4: Serve the dish Add Parmesan cheese, a knob of butter, sun-dried tomatoes, burrata cheese, and a drizzle of olive oil.
