Restaurante Aizomê agora serve salmão: entenda a decisão da chef Telma Shimizu

Por quase duas décadas, o Aizomê (@aizomerestaurante) nunca serviu salmão. Agora isso mudou. A chef Telma Shimizu (@telmashiraishi) explica ao Paladar os critérios que a fizeram mudar de posição depois de quase 20 anos: rastreabilidade, certificações ambientais e bem-estar animal. O peixe escolhido vem de uma fazenda na Patagônia chilena, sem uso de antibióticos. O Aizomê afirma ser o primeiro restaurante brasileiro a servir um salmão certificado nesses critérios — e a decisão coincide com a abertura da terceira unidade do restaurante, no bairro da Saúde.
