Today, I’m finally having something I haven’t eaten in ages—Spicy Stir-fried Gopchang! (a.k.a. veggie stir-fried pork intestines)!!! I had it after working out with fried rice and steamed eggs on the side! Just look at how much there is... doesn’t it seem like a crazy amount? It’s from a place right near my place, and since it was freshly stir-fried, it was piping hot and absolutely delicious!!! The fried rice, too, tasted like it was made fresh right next to me! The pork intestines were both chewy and tender at the same time! I used to eat them so often, but I feel like I’ve been neglecting them lately, so I felt kind of guilty. To make up for it, I fully enjoyed every bite today 🙏🏻. I stuffed my mouth with a mix of glass noodles, veggies, and pork intestines, slurping it all at once. I was so happy eating! Wrapping it in lettuce and perilla leaves made it taste even better, and adding garlic, chili peppers, and ssamjang took it to another level! Of course, I left a bit of intestines to mix into the fried rice at the end.
