Traditional Lima Bars: The Story of the 20th Century Told from the Tables Where Lima's Bohemian Life Was Born. From Cordano to Queirolo, from Rovira in Callao to the legendary Palermo: the establishments that shaped generations. In 1880, in the midst of the war with Chile, the Genoese immigrant Santiago Queirolo founded a tavern in the old Magdalena Vieja neighborhood that still retains its prestige today. It was the beginning of a tradition: Italians, Spaniards, Japanese, and Chinese built the bars that gave Lima its first modern image, as the city tore down its walls and finally discovered the nightlife. We explore Cordano—next to the Government Palace and now a National Cultural Heritage site—Bar Cela and Negro Negro in Plaza San Martín, the Gran Hotel Bolívar, a haven for the great stars, and La Catedral, which inspired Vargas Llosa. Among those who sat at these tables were Martín Adán, Blanca Varela, Chabuca Granda, Cérvulo Gutiérrez, and Víctor Humareda.
