How to Make Simple Rice Pudding

If you like rice pudding sweeter increase sugar to 1 1/2 cups or you could sprinkle with brown sugar after it's done, then put it under the broiler for a couple of minutes to create a little crunchy top. The recipe is very versatile, add anything you like for the one cup of fruit. I've used chopped dried dates in the past and that's really good also. Thanks for watching, Phyllis Ingredients: 3 cups cooked rice 3/4 cup sugar 3 eggs 2 1/2 cups whole milk 1 teaspoon vanilla extract 1/2 teaspoon salt 1/4 teaspoon ground nutmeg Your choice on what to add: 1 cup of fruit, raisins, fruit cocktail, pineapple, or dates Directions: 1. Whisk together sugar, eggs, milk, butter, spices, salt, and vanilla. 2. Mix in rice and your choice of fruit. Stir until mixed well. 3. Pour into greased casserole dish and bake at 325F for 1 hour. At the 30 minute point, stir from the bottom up. 4. Serve warm with butter or whipped cream. 5. Be sure to refrigerate leftovers.
