Super Soft Ragi Idli Recipe | Healthy Finger Millet Idli with Easy Peanut Coconut Chutney | Breakfast Recipe @globalwithodia Today I made super soft and healthy Ragi Idli at home. This nutritious breakfast recipe is prepared using ragi, rice, urad dal, fenugreek seeds and poha. The batter was naturally fermented overnight, making the idlis soft, fluffy and delicious. For the chutney, I roasted peanuts, green chilies, ginger, curry leaves, roasted chana dal, tamarind and fresh coconut. I skipped mint leaves and coriander leaves, and also did not add dry red chili in the tempering. Even with these small changes, the chutney turned out creamy, flavorful and perfect with the soft ragi idlis. Ingredients for Ragi Idli: • 1 cup Ragi (Finger Millet) • 1 cup Rice • 1/2 cup Urad Dal • 1 tbsp Fenugreek Seeds • 1/4 cup Poha • Salt to taste • Cold Water/Ice as required / normal water Method: Wash and soak ragi and rice together for 6-8 hours. Soak urad dal and fenugreek seeds separately. Soak poha 15 minutes before grinding. Grind ragi and rice into a smooth batter. Grind urad dal, fenugreek seeds and poha into a fluffy batter. Mix both batters well and ferment overnight. Add salt and mix gently. Pour batter into greased idli moulds. Steam for 12-15 minutes. Cool slightly and remove the idlis.
