Can we still make cheese the way they did in the 18th century? In this video, I try an age-old aging method: clothbound cheddar, a traditional English method that's centuries old. This technique involves wrapping the cheese in a cloth (muslin) coated with fat, allowing it to mature slowly for several months. The result?
