Don't Throw These Away! Sicilian Cauliflower Leaf Recipe | Food That Looks After You Series. In this video I show you one of the simplest and most nourishing things I cook at home using cauliflower leaves that many people would normally throw away. Gently steamed with just a little water, dressed while still warm with olive oil, white wine vinegar, lemon, salt and pepper, these greens become soft, vibrant, earthy, and incredibly satisfying. This is the kind of food that reminds me of home, of simple Mediterranean cooking, and of the idea that healthy food does not need to be expensive, complicated, or fashionable. The leaves cook gently in their own steam rather than boiling in large amounts of water, helping preserve flavour, texture, and many of the nutritional benefits naturally found in greens like these. Cauliflower leaves are rich in fibre, vitamin K, antioxidants, and other nutrients that support the body naturally. The olive oil is added raw at the end so it keeps its fresh flavour and natural polyphenols, an important part of the Mediterranean diet. The little crunch that remains in the stems gives beautiful texture and character to the dish. You can make this using cauliflower leaves from your own garden, from supermarket cauliflower, or by using other greens such as kale, spring greens, collard greens, cavolo nero, or similar leafy vegetables. Tougher leaves may need a little longer, softer greens a little less, but the principle remains the same: a small amount of water creates steam, and the greens gently cook in their own moisture. I also show you how I like to eat these greens with bread, tomato, and mozzarella, creating a simple sandwich that is rustic, comforting, and deeply satisfying. Sometimes the simplest food really is the food that looks after you. Ingredients Cauliflower leaves, entirely up to you Alternative greens: kale, spring greens, cavolo nero, collard greens or leafy greens About one third of a glass of water Salt Black pepper White wine vinegar Extra virgin olive oil Half a lemon Bread Tomato Mozzarella Optional: chilli flakes, garlic, oregano, butter Method Wash the cauliflower leaves thoroughly and trim only if necessary. If the leaves are very large, cut or fold them so they fit comfortably into your saucepan. Place them into a saucepan with only a small amount of water at the bottom, just enough to create steam. Place the lid on and bring the water quickly to a boil over high heat. As soon as the water boils, lower the heat to medium or medium low and allow the greens to cook gently in their own steam for around 15 minutes. Tougher greens may need slightly longer, softer greens slightly less. The leaves will soften beautifully, become a deeper vibrant green, and the stems should remain slightly al dente with a lovely texture. Once cooked, remove the greens and slice them into strips while still warm. Dress them immediately with salt, black pepper, white wine vinegar, extra virgin olive oil, and fresh lemon juice. Mix well while warm so the flavours combine naturally. Enjoy simply on bread, or with tomato and mozzarella for a rustic sandwich. You can also serve these greens alongside fish, meat, eggs, or beans. They are equally delicious warm, lukewarm, or cold from the fridge.
