If you’re new to using the Instant Pot, don’t worry, I will explain what I do step by step so you can follow along and make your own pot of this delicious, nutritious and very filling soup. This recipe will make 6 to 8 servings. The soup will come out thick and chunky. If you would like it more soupy, then put in less vegetables and more water. The ingredients you’ll need: 2 cups green or brown lentils 2 onions One head of garlic 2 large carrots 5 stalks of celery 1 red bell pepper 1 28 ounce can of diced tomatoes 2 cups of fresh or frozen spinach And 4 tablespoons of extra virgin olive oil For the seasonings you can use any spices you like, here’s what I used: 1 teaspoon dried basil 1 teaspoon Italian seasoning 2 teaspoons sea salt 1 teaspoon cumin 1 teaspoon turmeric 1 teaspoon garlic powder Fresh ground pepper to taste
