Water, pH and Buffers: Biochemistry #2 | ZC OCW
This lecture continues with the characteristics associated with water, starting with describing water as a nucleophile. After that, the concept of the ionization of water and its quantification is discussed mentioning the ionic product of water (kw). The following discussed topic is the dissociation of weak acids and the pH scale followed by determining the pka value of a weak acid through the titration curve and other important aspect related to the addition of removal of a proton in an organic compound as in some amino acids in the body. Finally, this lecture briefly discusses buffers and mentions some important physiological buffers Timeline: 00:00 Introduction & Course Details 00:13 Revision 05:20 The nucleophilicity of water 15:58 Ionization of water Kw 23:18 The pH scale 33:17 Acid dissociation constant of weak acids 37:46 Weak acids examples 42:42 Henderson-Hasselbalch equation 45:30 pka determination by titration 51:14 Protonation and deprotonation of compounds 58:58 pka of polyprotic acids 1:01:18 Buffers and buffering capacity About this course (Biochemistry): Instructor: Dr. Reem Arafa, Professor of Biomedical Sciences (BMS) program at the University of Science and Technology in Zewail City, Egypt.
