Each time the flower bunch is cut, the sap-filled tube is removed and replaced with an empty one. The collected fresh sap is called Legen, which can be drunk immediately. It tastes quite refreshing, a mix of sweet and slightly sour, with the distinctive aroma of Legen. Pure Legen is a thick white drink, like water used to wash rice. This Legen only lasts for 3-4 hours. Beyond that point, the taste quickly changes to Tuak, a bitter drink that can cause intoxication due to its high alcohol content. Authentic Legen is also quite difficult to find in Tuban, unless you visit villages with abundant palm trees, such as the Boto area, where the Banyu Langse waterfall is located. Just for nostalgia's sake, this Legen used to be sold by vendors who traveled around using ongkek (traditional wooden carts) and bamboo equipment.
