Die perfekte Erdbeertorte! 🍓 Geburtstagstorte für meine Mama 🍓

Mom is celebrating her 70th birthday, and I'm surprising her with a fruity strawberry cake 🍓🍰. The cake is a real showstopper, perfect for birthdays 🎈 or any other summery occasion 🌞. You can probably find delicious strawberries 🍓🍓 in your area, which you can use for this. So, let's get started: First, I baked my delicious cake layers from an almond sponge cake batter. They always turn out perfectly with my cake rings and matching springform pan bases. Let them cool completely on a wire rack after baking. The special thing about this cake is the strawberry buttercream. For this, I first prepare a strawberry pudding 🍓. The smell reminds me of when my mom used to make strawberry jam. Truly wonderful! Please let the pudding cool completely, covered. If it's not sweet enough for you, add the sweetener to the strawberry buttercream later. Then prepare the buttercream. Now combine the strawberry pudding and the buttercream. Before adding the strawberry pudding to the buttercream, strain it through a sieve. And—very important—please make sure that the pudding and the buttercream are at the same temperature. Then the strawberry buttercream will be absolutely perfect! Now you can assemble the cake. Cut each cake layer in half horizontally with a cake saw. Using a piping bag, pipe the strawberry buttercream around the outer edge of each cake layer and place fresh strawberries in the center. Add a thin layer of buttercream on top of the strawberries. Continue stacking the cake layers until it reaches the desired height. It's really quite simple! Quickly put it in the refrigerator. Then frost the cake with the remaining buttercream, and it's almost finished. For decoration, I prepared a white ganache that drips slightly down the sides of the cake. On top, alternate placing a strawberry and piping a little strawberry buttercream. Then you can add a cake topper of your choice. I chose the number "70" for my mom. Pretty, isn't it?
