POV Peanut and Chicken Noodle Salad

Quick and dirty peanut noodles with chicken and cucumbers. This was the flavor of the summer of 1999, when I ate this at least three to four times a week from the food truck Goosebeary's, parked in front of the MIT biology lab. I mean, I think this one is better, but it still was based on that one. Perfect picnic fare! PLEASE READ!
