Wondergarden - A Hatari Philosophy

Hatari Lodge in Tanzania, together with its sister initiative Wondergarden, is pioneering Culinary Conservation - a regenerative approach to travel rooted in food, biodiversity and local communities. Native ingredients are sourced from multi-cropping gardens and carefully processed — dried, milled, fermented, pressed and canned — into products used in the lodge kitchens and fine dining cuisine, following the Slow Food principles of free, fair and good.
