There are several types of ramen: shio, shoyu, tantamen, miso, and tonkotsu. Tonkotsu is our favorite, but we kept experimenting and came up with a shoyu ramen using chicken broth that anyone can make. It's much quicker than tonkotsu but also very tasty. In traditional shoyu ramen recipes, the broth is made using chicken carcasses and feet to make the most of the meat and use parts with a lot of cartilage, which creates a thicker broth.
